Italian Sausage & Pepper Pierogi

Ingredients

  • 1 pkg. Simply Pierogi
  • 1 pkg. Italian sausage (cooked and cut into pieces)
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 2 bell peppers (cut into wedges)
  • 1 small onion (cut into wedges)
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth

Instructions

  1. Bring a large pot of water to a boil. Add pierogi and cook stirring occasionally for 6 minutes.

  2. Remove pierogi from the water and set aside.

  3. Heat up some olive oil in a pan.

  4. Add bell peppers, onions and garlic. Cook for 5 to 6 minutes.

  5. Add cooked sausages and chicken broth. 

  6. Add boiled pierogi and cook for another 5 minutes.

  7. Garnish with chopped parsley.
